Driftaway Cafe’s Crab Cake Benedict
Yield: 2 servings
2 pounds crab meat
1 red pepper
1 green pepper
1 white onion
2 brioche buns, diced small
1 teaspoon Sriracha
1 tablespoon mayo
¼ teaspoon fish sauce
salt and pepper, to taste
1 Thomas’® Original English Muffin
4 ounces hollandaise sauce
2 poached eggs
1. Sauté vegetables, then cool. Mix together thoroughly all ingredients except the crab.
2. Add crab meat, gently folding it in so as to not break it apart too much. Form patty to desired size and cook on both sides until golden brown.
1. Split and toast the Thomas’® Original English Muffins.
2. Place crab cake on top of the English Muffin, then layer with egg and finish with hollandaise drizzle.
